Easy Shrimp and Chorizo Paella Recipe

I’ve been wanting to try my hand at Paella for so long and I finally did! To be honest I was pretty intimidated, but I’m glad I took the leap. It is now one of my husband’s favorite dishes. For those who don’t know Paella is a Spanish rice originally from Valencia. I’ve seen many pictures of this dish including mussels and scallops. I decided to keep it simple and use shrimp, chorizo and peas. One of the key ingredients to this dish is saffron. It is a spice derived from a flower. Treat this like gold! One tiny bottle costs about $21. Hope you enjoy this easy shrimp and chorizo paella dish!

Ingredients

  • 2 TBS Olive Oil
  • 1 yellow onion diced
  • 3-4 cloves of garlic minced
  • 2 TBS of tomato paste
  • 1 tsp smoked paprika
  • 2 pinches of saffron
  • 1/2 tsp turmeric
  • 1/2 tsp red chili flakes
  • 2 pinches of salt
  • 1 cup of paella rice (I used Carolina parboiled rice recommended for Paella.)
  • 3 cups of chicken broth ( I made mine using bouillon. Check your rice for recommended amount of liquid.)
  • 4 chorizo sausages sliced
  • 1 lb. of raw shrimp peeled and deveined
  • 1/2 cup of peas (I used Birdseye’s frozen peas and followed the microwave directions.)
  • dried parsley flakes

Directions

  1. Heat oil and add in onion. Sauté until golden in color. Then add in garlic and sauté for 30 seconds.
  2. Add in tomato paste and stir in for 2-4 minutes.
  3. Stir in smoked paprika, chili flakes, saffron, turmeric, and salt.
  4. Next add in the rice and stir fry.
  5. Once the rice is fully incorporated add in the chicken broth. Bring to a simmer. Reduce heat to low and cover for 10 minutes.
  6. In the meantime, cook chorizo and shrimp until fully cooked on stove top.
  7. Prepare peas.
  8. After the 10 minutes have passed, add in chorizo and cook for 5 more minutes uncovered.
  9. Add shrimp on top and cook for 5-10 minutes uncovered until it reaches desired consistency. I cooked mine until it was almost dried out.
  10. Stir in peas.
  11. Sprinkle parsley on top. I only had dried which worked out well, but if you have fresh parsley even better!
