Easy Chorizo Tacos
I love tacos all year long, but especially in the summer! Today I made a simple and tasty quick taco dinner. On a hot day less time in front of the stove is ideal. A meal that will taste like you put in the time is even more ideal!
Ingredients (Servings 2)
- 2 chorizo sausages
- 1/2 TBS EVOO
- half of a small lime
- cilantro to taste
- 1/4 cup red onion diced
- half a large avocado cut into chunks
- 1/2 cup of shredded cheddar cheese
- taco shells
Directions
- Cut chorizo sausages so they look as though they are grounded.
- Heat EVOO in pan and then brown the chorizo. About 5-10 minutes.
- Squeeze half a lime onto chorizo.
- Sprinkle cilantro onto chorizo and lightly mix.
- Heat taco shells according to packaging directions.
- Add chorizo, avocado, cheese and onion to taco shells and enjoy!
Notes
- You can add any toppings to this dish. I just happen to love cheese, avocados, and red onion.
- Chorizo already has so much flavor that I didn’t think it was necessary to add any additional spices. The lime does a nice job in complimenting the flavor along with the cilantro.
- I just use regular taco shells from the grocery store, like El Paso.
- This recipe will not yield leftovers! So plan to double the recipe if you want leftovers or seconds!
- I used a ceramic pan. So it wasn’t necessary to use a lot of EVOO. Alter this step according to what kind of pan you use.
