Easy Chorizo Tacos

I love tacos all year long, but especially in the summer! Today I made a simple and tasty quick taco dinner. On a hot day less time in front of the stove is ideal. A meal that will taste like you put in the time is even more ideal!

Ingredients (Servings 2)
  • 2 chorizo sausages
  • 1/2 TBS EVOO
  • half of a small lime
  • cilantro to taste
  • 1/4 cup red onion diced
  • half a large avocado cut into chunks
  • 1/2 cup of shredded cheddar cheese
  • taco shells
Directions
  1. Cut chorizo sausages so they look as though they are grounded.
  2. Heat EVOO in pan and then brown the chorizo. About 5-10 minutes.
  3. Squeeze half a lime onto chorizo.
  4. Sprinkle cilantro onto chorizo and lightly mix.
  5. Heat taco shells according to packaging directions.
  6. Add chorizo, avocado, cheese and onion to taco shells and enjoy!

Notes
  • You can add any toppings to this dish. I just happen to love cheese, avocados, and red onion.
  • Chorizo already has so much flavor that I didn’t think it was necessary to add any additional spices. The lime does a nice job in complimenting the flavor along with the cilantro.
  • I just use regular taco shells from the grocery store, like El Paso.
  • This recipe will not yield leftovers! So plan to double the recipe if you want leftovers or seconds!
  • I used a ceramic pan. So it wasn’t necessary to use a lot of EVOO. Alter this step according to what kind of pan you use.
